Check out my latest recipe. Inspired by a popular Vietnamese street food is my own home made Vietnamese sandwich called "bahn mi" filled with healthy pickled carrots and daikon salad and deliciously tasty grilled lemongrass chicken!
There is 7-steps in making this recipe:
Make the sauce mixture to marinade the chicken by combining minced garlic, lemongrass, chilli, french shallots, coriander stems, fish sauce, oyster sauce, sesame oil and soy dark caramel sauce
Marinade chicken and leave for a few hours or overnight is best in the fridge
Wash, prepare and slice carrots and daikon into thin strips. Add both carrot and daikon in a large bowl and add rice vinegar or white vinegar, water and caster sugar to pickle the vegetables
Wash, prepare and slice a cucumber into thin slices and spring onions into thin strips
Brush some cooking oil on a hot skillet. Then grill marinated chicken on both sides to brown before putting in the oven to cook through
Slice the cooked chicken into thin slices
Make the bahn mi sandwich by first spreading some mayonnaise, sweet sauce and chilli sauce. Then add grilled chicken pieces, pickled carrots and daikon, sliced cucumber, spring onions and coriander leaves
